Quiche with leeks and goat cheese
Ingrediënten for 8 persons:
• 230 gr. puff pastry
• 25 gr. butter
• 2 large leeks
• 100 gr. soft goat cheese (Naturel, De Molkerei)
• 2 eggs + 1 yolk
• 2 dl. crème fraiche,
• a bunch of fresh chives (12 gr.)
• 25 gr. grated gruyere cheese
• quiche form Ø 30 cm.
• greaseproof paper
Preheat the oven, 200°C, convection oven.
Put the puff pastry in the quiche form, prick in with a fork (every 2 à 3 cm.) and bake the pastry for 10 minutes. Turn the oven to 175°C. Cut the leek into rings, ½ cm. Braise the leek in 5 minutes in the butter. Let it cool.
Whisk the eggs with the yolk and the crème fraiche, the fine chopped chives and pepper and salt. Cut the goat cheese in cubes. Divide the leeks over the bottom, spread the goat cheese over it and pour the egg mixture over it. Sprinkle with the gruyere cheese and bake for 30 à 35 minutes.
Serve warm. Can also serve as a lunch dish for 3 or 4 persons.
TIP: if you put the greaseproof paper in the quiche form, you can get the quiche out of it easily.
